Basmati Rice - 2 cups
Moong dal split (Yellow mung beans) - 1 cup
Vegetable (Chopped) - 2 to 3 cups
Turmeric - 1/2 tsp.
Coriander powder - 1 tbsp
Fennel seeds - 1/2 tsp
Cumin seeds - 1 tsp
Powdered Black pepper - 1/2 tsp
Asafoetida - 1/3 tsp
Cayenne - 1 pinch
Salt to taste
Ghee for frying
Water as required for cooking |
Wash and rinse the dal thoroughly. In a vessel take 8 cups of water, add the dal, place it on flame and bring to a boil. Reduce the flame and cook till the dal breaks up. If you prefer a less consistent porridge, you may add more water.
Now wash and rinse the rice and add to the dal in the vessel. Add the chopped vegetables to this. Stirring frequently, cook for 15 minutes.
As the rice gets cooked, melt ghee in a frying pan and fry cummin and fennel first until they turn light brown. Once fried add the other spices and fry for another 1 minute. Add this to the rice-dal mix. Cook for another 10 minutes, stirring regularly till you get the expected consistency. Add salt to taste and finally garnish with grated ginger.
