CABBAGE AND EGG THORAN
 

 

you would be surprised by how delicious this recipie can be if prepared properly

 

Ingredients

1/2 a cabbage
2 onions
a few shallots
4 green chillies
1 cup grated coconut
1 teaspoon tumeric powder
4 eggs
coconut oil
mustard seeds
curry leaves
salt to taste

Directions

Grate the cabbage or slice them very finely (like noodles). wash thoroughly and dry it in a kitchen towel, this will prevent too much water forming during cooking which could make the eggs soggy. Slice the onions and chillies, lenghtwise
Heat oil in a deep frying pan for example a wok type pan , when the oil is hot add mustard seed, curry leaves and 2 of the green chillies and sauté till slightly brown add the cabbage along with the tumeric and stir fry , keep stiring till the cabbage is soft and not fried, make sure that all the water as evaporated. Add salt to taste, make sure to add salt only at the end as salt draws too much water from the vegetables if you add in the beginning.take it off the fire and keep aside.

Prepare the scrambled eggs.
beat the eggs along with the diced shallots and chillies and salt to taste , you may add a pinch of tumeric to the egg to give it some colour; heat oil and scramble the eggs. add this to the cabbage thoran and mix. Enjoy!
