Hot and spicy Kerala style duck curry.
Cut the duck into big pieces after washing it clean. Heat the oil and saute the onions first followed by green chillies and ginger. When the onions turn brown add the chilly powder, turmeric powder and pepper powder and sauté till the oil remains. Now add the duck pieces to this and sauté again. Add water required to cook the meat. Also add salt to taste. Keep this on medium flame till the meat is cooked and the gravy thickens. When done cooking put the curry leaves and remove from flame. Hot spicy duck curry is now ready to be served.
