CARROT SOUP

CARROT SOUP
 

 

An ideal soup for any occasion

 

Ingredients

1 large onion, chopped
2 cloves of garlic, crushed
1 tbsp olive oil
450 gms carrot, chopped
1 tsp mixed herbs
850ml stock
140 ml soured cream
salt and pepper

Directions

Saute the chopped onion and garlic in the oil until transparent. Add the carrots,mixed herbs and stock. Bring to boil and simmer for about 30 minutes until the carrots are soft. Cool a little and then liquidise until smooth.
Add the soured cream, season to taste and mix thoroughly.
Heat through gently and serve.

NB. Make sure that the soup is not allowed to boil once the soured cream is added.
